Ingredients:
For the achari masala:

1 teaspoon fenugreek seeds (methi)
1 tablespoon coriander seeds (dhania)
1 tablespoon fennel seeds (saunf)
1 tablespoon cumin seeds (jeera)
1 teaspoon nigella seeds (kalaunji)
1 teaspoon carom seeds (ajwain)
2 dried red chillies

For the achari kela:

1 large raw plantain (kaccha kela)
1 teaspoon asafoetida (hing)
1 teaspoon mustard seeds (rai)
1 tablespoon curry leaves (kadhi patta)
1 teaspoon turmeric powder (haldi)
1 teaspoon Kashmiri red chili powder
1 teaspoon brown sugar
1 teaspoon dry mango powder (amchur)
1 tablespoon fresh lemon juice
Fresh coriander for garnishing
Chaat masala for sprinkling
Salt to taste
Oil for deep frying
2-3 tablespoons oil for tempering

Method:

Prepare achari masala: In a dry pan, roast all masala ingredients - fenugreek, coriander seeds, fennel, cumin, nigella, carom seeds, and red chillies - for 2-3 minutes until aromatic. Let cool completely, then grind to a coarsely ground powder (not too fine).
Prepare plantain: Peel the raw plantain and cut into thin rounds or diagonal slices. Pat dry with a kitchen towel to remove excess moisture.
Fry plantain: Heat oil for deep frying. Once hot, fry the plantain slices in batches until golden brown and crispy. Don't overcrowd. Remove and drain on paper towels.
Prepare tempering: In a large pan, heat 2-3 tablespoons oil. Add mustard seeds and let them splutter.
Add aromatics: Add asafoetida, curry leaves, and cumin seeds. Sauté for 30 seconds until aromatic.
