Bacon and Egg Farofa with Bananas
Ingredients:
1 cup Cassava Flour (Raw or Roasted) Not cassava starch, tapioca, or polvilho
1 cup onion, diced
4 garlic cloves, minced
5 eggs
5 slices of bacon
2 bananas, sliced
2 tsp salt
Pepper, to taste
2 TB parsley, chopped
2 TB green onions, chopped

Instructions:
Prepare Ingredients:
Cut the bacon into small pieces.
Dice the onion.
Mince the garlic.
Slice the bananas.
Chop the parsley and green onions.
Render Bacon Fat:
In a 12-inch sauté pan or medium pan, heat over medium-high heat.
Add the bacon pieces and cook until golden.
Strain the bacon through a mesh strainer, separating the crispy bacon from its flavorful fat.
Sauté Onions and Garlic:
Using 1 TB of the reserved bacon fat, sauté the diced onions until soft.
Add the minced garlic and sauté for an additional 30 seconds.
Cook Eggs:
Crack the eggs into the pan.
Season with salt and pepper.
Poke the egg yolks and allow them to slightly cook.
Using a spoon or spatula, gently cut the eggs into large curds, ensuring they are not completely hard.
Add Bananas and Cassava Flour:
Once the eggs are nearly cooked, add the sliced bananas.
Stir in the cassava flour until well combined.
Cook for about 2 minutes, until heated through.
Final Touches:
Add the crispy bacon pieces, chopped parsley, and green onions.
Adjust salt to taste.
Serve:
Once everything is well combined and heated through, the dish is ready to serve!
