Healthy Ridge gourd Dal or Heerai kai Thovve

Ingredients -

Ridgegourd, boiled Toor dal with tomato, 2-3 green chillies, coconut milk, curry leaves coriander leaves, red chillies, groundnut oil, mustard seeds, cumin seeds, fenugreek seeds, 🍋 lemon juice, salt, asafoetida & pinch of tumeric powder,
1/4 teaspoon of coarse jeera & pepper powder,
1/4 teaspoon spoon of kashmiri red chilli,
1/4 teaspoon of coriander powder

Roughly chop some Ridgegourd into medium-sized cubes, boil theToor Dal with tomatoes, 2-3 green chillies
In a hot pan, pour oil, after it heats up, add in mustard seeds after it crackles, add in cumin seeds, add in fenugreek, then add in red chillies, curry leaves 🍃 & fry well, then add in chopped ridgegourd cubes, fry well, after that add in a pinch of tumeric powder, a pinch of asafoetida, fry well, let it cook for sometime,
add in 1/4 teaspoon of coriander powder,
1/4 teaspoon spoon of kashmiri red chilli,
1/4 teaspoon of coarse jeera & pepper powder, saute, until it blends well.

Then add in boiled toor dal along with stalk, stir it well, add in required salt, give it a nice mix, then add in a cup of coconut milk, or freshly grated coconut, add in chopped coriander leaves, mix well, let it come to a nice boil. Finally, squeeze in lemon juice, mix it, and switch off the gas stove.
