Drums of Heaven is a popular Indo-Chinese appetizer featuring fried chicken drum

Ingredients:

For the Chicken:

10-12 chicken drumettes (drumsticks or winglets)

1 tablespoon soy sauce

1 tablespoon vinegar

1 tablespoon ginger-garlic paste

1 teaspoon red chili powder

Salt to taste

1 egg (optional, for coating)

2 tablespoons cornflour

2 tablespoons all-purpose flour (maida)

Oil for deep frying


For the Sauce:

1 tablespoon oil

1 tablespoon finely chopped garlic

1 tablespoon finely chopped ginger

1 small onion, finely chopped

1 tablespoon soy sauce

1 tablespoon chili sauce (adjust to taste)

1 tablespoon tomato ketchup

1 teaspoon vinegar

1 teaspoon sugar

1 teaspoon black pepper powder

Spring onions for garnish (optional)

Salt to taste


Instructions:

Preparing the Chicken:

1. Marinate the chicken: In a large bowl, mix soy sauce, vinegar, ginger-garlic paste, red chili powder, and salt. Add the chicken drumettes and marinate for at least 30 minutes (or longer for better flavor).


2. Coating for frying: In a separate bowl, mix cornflour and all-purpose flour. Add the marinated chicken, and coat well. (Optionally, dip in a beaten egg before coating for extra crispiness).


3. Deep frying: Heat oil in a deep pan or wok over medium heat. Fry the coated drumettes until they are golden brown and cooked through, about 8-10 minutes. Remove and drain on paper towels.



Preparing the Sauce:

1. Sauté aromatics: In a wok or large pan, heat 1 tablespoon of oil. Add chopped garlic and ginger, and sauté until fragrant. Add the chopped onions and cook until soft and translucent.


2. Add the sauces: Add soy sauce, chili sauce, tomato ketchup, vinegar, and sugar. Mix well and let it simmer for a minute. Season with salt and pepper as needed.


3. Coat the chicken: Add the fried chicken drumettes to the pan and toss them well in the sauce until they are evenly coated.


4. Garnish and serve: Garnish with spring onions and serve hot.
