This "Pain Patate" Recipe is hands down the best one you could ever try. I perfected it over the years and after trying countless others, I can safely say that this one is unmatched! So many flavors, the perfect amount of spice and the right balance between soft and firm! I also wanted to take it to the next level with my "Raisin & Prune Sauce" and it did just the trick! Enjoy!

Pain Patate Ingredients:
2 lbs white sweet potatoes
3 ripe bananas
1 cup brown sugar
2 tablespoons ginger root, grated
1/2 teaspoon salt
2 teaspoons vanilla extract
1 teaspoon ground nutmeg
2 teaspoons cinnamon
Rind of 2 limes
1 1/2 cups coconut milk
12 ounces evaporated milk
3 tablespoons butter, melted
1/2 cup seedless raisins
1/4 cup dark rum
1/4 cup flour

Rum Raisin & Prune Sauce:
Ingredients:
1/4 cup raisins
1/4 cup prunes/ chopped 1/2 cups dark rum 1/2 cup unsalted butter 1/2 tsp salt
1/2 cup brown sugar
