Here's a fluffy dosa prepared with rice, pressed rice and yogurt. It needs no fermentation, so super quick to make!
Check this quick, tasty and easy Sponge Dosa. Blend soaked rice, puffed rice, methi daana and yogurt to make a smooth batter. Add salt and spread some batter on a greased non-stick pan. Cook with ghee. Eat this स्पंज डोसा with chutney. Easy to digest and simple to make yet so delicious. SPONGE DOSA

Ingredients

2 cups raw rice
½ cup pressed rice (poha)
1 tbsp fenugreek seeds
2 cups yogurt
Salt to taste
Ghee for drizzling
Coconut chutney to serve

Method

1. Thoroughly wash pressed rice and raw rice separately. Transfer this into a large bowl, add fenugreek seeds and yogurt and mix well. Set aside to soak for 2-3 hours.
2. Put the soaked mixture into a mixer jar, add ½ cup water and blend to a fine paste. Transfer this into a bowl and set aside to ferment for 8-10 hours.
3. Add salt to the fermented mixture and mix well.
4. Heat a non-stick tawa, drizzle a little ghee and grease with a kitchen towel. Pour a portion of the batter on the hot tawa and lightly spread it in clockwise motion to make a thick dosa. Cook for 1-2 minutes, drizzle some ghee and cook for a few seconds. Flip the dosa and cook the other side for a minute.
5. Serve hot with coconut chutney.
