Full written recipe - Paneer Changezi

Prep time: 10-15 minutes
Cooking time: 1 hour
Serves: 5-6 people


Blanching Tomatoes
TOMATO | टमाटर 6 NOS. 
ICE COLD WATER | बर्फ वाला पानी
Gravy Base
OIL | तेल 2 TBSP 
ONION | प्याज़ 1 LARGE SIZED. (CHOPPED)
GINGER GARLIC PASTE | अदरक लहसुन की पेस्ट 2 TBSP
GREEN CHILLI | हरी मिर्च 2-3 NOS. (CRUSHED)
TURMERIC POWDER | हल्दी पाउडर 1/4 TSP
KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 2 TBSP
CORIANDER POWDER | धनिया पाउडर 1 TBSP
GARAM MASALA | गरम मसाला 1/2 TSP
CUMIN POWDER | जीरा पाउडर 1 TSP
HOT WATER | गरम पानी A SPLASH
SALT | नमक TO TASTE 
Grilled/Sauteed Paneer
PANEER | पनीर 350 GRAMS
Marinade
THICK CURD | गाढ़ा दही 2 TBSP
GINGER GARLIC PASTE | अदरक लहसुन की पेस्ट 1 TBSP
GREEN CHILLI | हरी मीर्च 2-3 NOS. (CHOPPED)
KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 2 TSP
TURMERIC POWDER | हल्दी पाउडर A PINCH
GARAM MASALA | गरम मसाला A PINCH 
SALT | नमक TO TASTE
CUMIN POWDER | जीरा पाउडर 1 TSP
LEMON JUICE | नींबू का रास 1 TSP 
OIL | तेल 2 TSP
CORN FLOUR | कॉर्न फ्लौर 1-2 TSP (OR BESAN)
OIL | तेल 1 TSP
Final Cooking
OIL | तेल 2 TBSP
CURD | दही 1/3 CUP (WHISKED)
FRESH CREAM | फ्रेश क्रीम 2 TBSP
GARAM MASALA | गरम मसाला A LARGE PINCH
YELLOW CHILLI POWDER | पीली मिर्च पाउडर 1 TBSP
HOT WATER | गरम पानी AS REQUIRED 
ROASTED KASURI METHI POWDER | भुनी कसूरी मेथी का पाउडर A PINCH
GREEN CHILLI | हरी मिर्च 2-3 NOS. (SLICED
CHAAT MASALA | चाट मसाला A PINCH
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)

Garnish
FRESH CORIANDER | हरा धनिया

Method:
To make the base gravy you’ll first need to blanch the tomatoes, make cross cuts over the tomatoes & add them to the boiling water & boil them for 10 minutes.
After boiling them for 10 minutes strain them using a spider & transfer them into a bowl.
Once the tomatoes cool down, peel & add them into a mixer grinder jar & grind them into a coarse puree.
Further heat a handi or a large kadhai, then add oil & let it heat nicely as well, once the oil gets hot add the chopped onions & cook them over medium high flame until they turn golden brown while stirring them at regular intervals.
Once the onions turn light golden brown, add the ginger garlic paste, stir & continue to cook until the onions turn golden brown.
Once the onions turn golden brown, lower the flame & add all the powdered spices & add hot water immediately, stir well & cook the spices for 3-4 minutes or until the oil separates.
Once the oil separates, add the tomato puree & salt, stir well then cover & cook the gravy for 15-20 minutes over medium flame & your base gravy for chicken changezi will be ready.
Cut the paneer into semi-thick rectangles.
Prepare the marinade by mixing all the ingredients in a large bowl, then place the paneer pieces & coat them with the marinade gently.
Set a nonstick or a well seasoned pan over high flame, then add the oil & grill the paneer pieces until light golden brown from both sides, transfer into a bowl & set them aside.
You make the final gravy, heat a tawa or any flat surfaced vessel over high flame, add oil & let it get hot. 
Further add the base gravy along with whisked curd, fresh cream, garam masala, yellow chilli powder & salt, stir well & cook over high flame for 10-12 minutes while stirring at regular intervals.
After cooking it for 10-12 minutes the gravy will become coarse & crumbly, this is the perfect texture for changezi, add hot water to adjust the consistency & cook for 5-6 minutes the gravy should be semi-thick to almost thick. Taste & adjust salt if required at this stage.
Then add the paneer along with green chillies, chaat masala, kasuri & mix well & cook for 2-3 minutes, coat the paneer with the gravy.
Lastly add fresh coriander & your delicious Delhi Style Paneer Changezi is ready, serve hot with tandoori rotis.
