With a a juicy brisket, when it sits wrapped it tends to soften the bottom bark too much. In this cook we wrapped with a grate underneath and also left it underneath for the hold, sitting it above an aluminum pan instead of inside the pan. The idea was keep the brisket above any juice other than some tallow that was used during the wrap. This is the result.
