Monks in Buddhist do not eat the five kinds of vegetables, Ohsinchae (五辛菜) that lead them to anger and passion. No vegetables from the allium family, onions, leeks, garlic, scallions, and chives, are ever used in buddhist food.

It is also vegetarian or vegan, and it is based on the Dharmic concept of ahimsa (non-violence).

Most Korean cuisine uses garlic and onion, but in temple cuisine, ginger and herbs replace the allium family and cook the truly deeper and better dishes.
