I heard from a few locals that this unassuming roadside eatery on Parra Main Road, North Goa, serves a xacuti that was worth the 20 odd kilometer drive from where we were staying in Dona Paula. But when we arrived, the chicken xacuti was over as were some other popular breakfast eats like egg chops, etc.. Nonetheless, we stepped into the kitchen to check what was available and found the remnants of a xacuti gravy that owner, Mahesh Parsekar’s mother prepares at home. The roasted spice aroma of the gravy was enticing, and so when Mahesh offered to cook a ros omelet with the gravy, I knew we had to try it. The weighty omelet was elevated a few notches by the aromatic flavours of the xacuti, and I definitely look forward to returning to Sai Anant Parra someday in the hope of tasting more of the traditional home cooked fare.
