Today we are doing an overview on one of our most used whetstones, the Naniwa traditional 220 grit. Course and medium stones are the most important stones in your sharpening repertoire. You can manipulate pressure with your fingers to either move lots of steel, or not much at all. We use this stone to grind new bevels in european knives, repair minor chips out of the blade, fix tipped knives, reprofile an edge and thin knives out.
