Recipe for Chocolate Peanut Butter Cupcakes 🧁
*makes 1 dozen large cupcakes*

PEANUT BUTTER FILLING:
*4 oz. cream cheese, softened
*1/4 cup creamy peanut butter
*2 TBSP sugar
*1 TBSP whole milk

CHOCOLATE CUPCAKE BATTER:
*1 3/4 cup all-purpose flour, sift after measuring
*2 cups sugar
*1/2 cup baking cocoa
*1 1/2 tsp baking powder
*1/4 tsp baking soda
*1/2 tsp salt
*2 eggs, room temperature
*1/2 cup vegetable oil
*3/4 cup water, room temperature
*1 cup whole milk
*1 tsp pure vanilla extract

CHOCOLATE FROSTING:
*2 cups confectioners sugar
*1/4 cup baking cocoa
*1 stick unsalted butter, room temperature
*4 TBSP whole milk

TOPPINGS:
*mini chocolate peanut butter cups

1. Preheat oven to 350°F.
2. Combine ingredients for peanut butter filling, beat until smooth (1-2 minutes).
3. Set peanut butter filling aside.
4. In a large mixing bowl, add dry ingredients for chocolate cupcake batter. Whisk to combine, set bowl aside.
5. In a medium mixing bowl, add wet ingredients for chocolate cupcake batter. Mix until combined, don't overmix!
6. Add wet ingredients into dry, mix until combined.
7. With a non-stick cupcake pan that has been lined, add chocolate cupcake batter filling each cupcake liner halfway.
8. Add 1 TBSP/1 spoonful-sized amount of peanut butter filling to the center of each cupcake.
9. Use remaining chocolate cupcake batter to top each cupcake, just enough to cover the peanut butter filling.
10. Bake at 350°F for 22 minutes.
11. Combine chocolate frosting ingredients in a mixing bowl & beat at medium speed for 2 minutes.
12. Cool cupcakes on a wire rack.
13. Fill pastry bag or plastic bag with chocolate frosting.
14. Plate chocolate cupcakes, frost each one, top with 2-3 mini chocolate peanut butter cups.
15. Enjoy!!
