Welcome and thanks for clicking on this video! This delicious cake has red velvet layers, vanilla bean pastry cream filling, fresh berries, and a pretty pink Swiss meringue buttercream outfit. It involved a bit of work, but I think it’s such a pretty cake inside and out.

Tips I used to decorate this cake: Wilton 104, Wilton 3, Wilton 4, Wilton 2, Wilton 7, Wilton 16, Wilton 199.

These recipes will make an 8”, 3 layer cake with two layers of filling.

Red Velvet Cake Ingredients:

113 g butter, room temperature
300 g granulated sugar
1 tsp baking soda (15 grams)
1 tsp salt (6 grams)
2 lg eggs (100 grams)
22 g cocoa powder
2 tsp vanilla extract
Several drops of red gel color or 2 Tbsp red liquid food color
320 g all-purpose flour
241 g or 1 cup whole milk with 2 Tbsp vinegar added, room temperature

Bake at 350 degrees Fahrenheit for 30-35 minutes in three separate 8” round pans. I coat my pans with butter and line the bottom with parchment rounds. Works like a charm!

Pastry Cream Ingredients:

2 Cups whole milk
2 tsp vanilla bean paste
130 g granulated sugar
1/4 Cup cornstarch (40 grams)
6 lg egg yolks
1 Tbsp butter

Other ingredients:

3/4 lb. fresh strawberries sliced
8 oz fresh blueberries
