Ingredients:
1 whole chicken
5-6 cloves of garlic
½-¾ stick of butter room temperature
½-1 tsp salt
¼-½ tsp black pepper
1 tsp thyme
1 tsp oregano
1-2 tbsp olive oil
1 large carrot
2-3 stalks of celery
1 medium onion


Instructions:
1. Mix butter, salt, pepper, thyme and oregano together, set aside
2. Cut the spine out of the chicken using kitchen shears, then cut down to the breast bone
3. Use your finger or the smooth handle of a spoon to separate the skin from the meat, and insert the compound butter between the meat and skin evenly over the entire chicken. Any extra compound butter can be rubbed over the skin on the outside. Optionally, you can season the interior of the chicken with a little salt.
4. Use some olive oil to lubricate your baking sheet, and place your cut carrots, celery, and onions down first, place your chicken skin side up on top of the vegetables
5. Bake chicken in a preheated 450F oven for about 45 minutes, then let rest at room temperature for 10 minutes
6. Optional: use the juices from the chicken to make gravy
7. Serve whole or cut into pieces before serving
