It's Patisserie week! The signature bake: Laminated Breakfast Pastries. Now I was actually quite excited about his bake as after many years of watching the contestants on Bake Off make puff pastry, I was curious what my success rate would look like. With that in mind I made two pastries, twelve Pecan Cinnamon Swirls and eight Cheese Danishes. Let me know how you think I did!

EQUIPMENT:
Rolling Pin
Stand or Hand mixer

INGREDIENTS:

Puff Pastry-
Dough
510g Bread Flour
1 tsp Salt
57g Unsalted butter, cold
283g Water, cold

Butter block
60g Flour
397g Unsalted butter, room temperature

Fillings:
Cheese Danish-
6 oz Cream cheese, softened
3 Tbsp Sugar
1 Egg yolk
2 tsp Lemon juice
1 tsp Vanilla

Pecan Cinnamon Swirl-
1/2 Cup Sugar
2 tsp Cinnamon
1 Cup Pecans, roasted and finely chopped
1/4 Cup Unsalted butter, melted

Glaze:
1 Cup Powdered sugar
2 Tbsp Milk
¼ tsp Vanilla

Egg Wash:
1 egg white, beaten

INSTRUCTIONS:

Make the Puff Pastry:

Make the Cheese Danish:
Preheat the oven to 375℉ and line two baking sheets with parchment paper.
In a medium bowl, beat together the softened cream cheese, sugar, egg yolk, lemon juice, and vanilla until well combined. Set aside.
On a lightly floured surface, roll out the puff pastry into a 16×8 in rectangle, making sure to square off the edges. Cut into 8 4x4 squares.
Brush the edges of puff pastry pieces with the beaten egg white. Fold each corner about an inch towards the center so you end up with a diamond shape. Gently press so the edges stick down and then brush the entire danish with the remaining egg white.
Scoop about 1 tablespoon of the filling into the center of each pastry.
Bake for 15 minutes.
While the danish is baking, make the glaze. Whisk together the powdered sugar, milk, and vanilla until very smooth. Pour into a plastic sandwich bag or pastry bag. Set aside.
After 15 minutes of baking, rotate the pans 180° and bake for another 15 minutes. Remove from the oven when the pastry is golden brown and puffed. Place on a wire rack to cool for a few minutes, and while the pastry is still warm, drizzle the glaze over the top of the pastries.

Make the Pecan Cinnamon Swirls:
Preheat the oven to 375℉ and line two baking sheets with parchment paper.
Combine the cinnamon and sugar into a small bowl. Set aside.
On a lightly floured surface, roll out the puff pastry into a 16x10 rectangle, making sure to square off the edges.
Brush the puff pastry with the melted butter. Sprinkle on the cinnamon sugar and pecans.
Cut the puff pastry into 12 thin strips, about 1/2 inch thick. Roll into a swirl and place on the baking sheet. Brush with egg white.
Bake for 15 minutes.
After 15 minutes of baking, rotate the pans 180° and bake for another 15 minutes. Remove from the oven when the pastry is golden brown and puffed. Place on a wire rack to cool.
