Hi everyone in this video we will be showing GHEE RICE SET MENU. These dishes we usually make during EID Festival, Sri Lankan Muslim wedding house & in some special occasions. This menu includes Ghee rice, Kaliya curry, Maasi sambal, Green peas curry, Achchar, Potato curry. & Chicken korma. These delicious are very special and mostly used for special occasions.

Rice - 2cups
Ghee - 3tbsp
Onion - 200g
Bay leaf - 2
Clove - 4
Cardamom - 3
Star anise - 1
Cinnamon - 2 pieces
Pandan leaf - 1 piece
Garlic - 8 cloves
Ginger - 1 piece
Water - 4cups
Salt to taste

SRI LANKAN GREEN PEAS CURRY INGREDIENTS-
Green peas - 300g
Carrot - 100g
Cashew - 50g
Liver (beef or chicken)-100g
Onion - 50g
Tomato - 50g
Green chilli - 2
Cinnamon stick - small piece
Ginger garlic paste -1 1/2tsp
Fenugreek seed - 1/4tsp
Turmeric powder - 1/2tsp
Red chilli powder - 1/2tsp
Roasted cumin powder - 1/2tsp
Coriander powder - 1/2tsp
Curry leaves
Oil - 4tbsp
Salt to taste

SRI LANKAN MUSLIM STYLE ACHAR INGREDIENTS -
Shallots - 200g
Capsicum - 100g
Onion - 2
Green chilli - 12
Date paste - 300g
Vinegar - 300ml
Ginger garlic paste - 1tbsp
Mustard seed powder - 1tsp
Brown sugar - 5tbsp
Kashmiri chilli powder - 3tbsp
Salt to taste

SRI LANKAN KALIYA CURRY INGREDIENTS –
Brinjal - 500g
Ash plantain - 250g
Potato - 250g
Beef liver - 100g
Onion - 50g
Tomato - 50g
Cashew nuts - 50g
Ginger garlic paste - 1 1/2tsp
Green chilli - 2
Cinnamon - 1 small piece
Coriander powder - 1/2tsp
Red chilli powder - 1/2tsp
Turmeric powder - 1tsp
Coconut milk - 2 cup
Oil - 3tbsp
Curry leaves
Salt to taste
TO MARINATE BRINJAL -

Turmeric powder - 1/2tsp
Red chilli powder - 1/2tsp

SRI LANKAN MAASI SAMBAL INGREDIENTS –
Onion - 500g
Maldive fish chips - 150g
Lemon juice - 3 tsp
Red chilli flakes - 3 1/2tbsp
Salt to taste

SRI LANKAN CHICKEN KURMA –
INGREDIENTS TO MAKE CHICKEN KURMA MASALA –
Coriander seed - 4tbsp
Cumin seed - 1tbsp
Fennel seed -1tsp
Cardamom - 3
Cinnamon stick -1 (2g)
INGREDIENTS TO MAKE CHICKEN KURMA –
Chicken - 1kg
Onion - 150g
Tomato -100g
Chilli - 3
Cloves - 4
Turmeric powder - 1tsp
Fennel seed -1/2tsp
Fenugreek seed - 1/2tsp
Cardomom - 3
Bay leaf - 1
Cinnamon - 1 piece
Ginger garlic paste - 2tbsp
Yoghurt - 3tbsp
Black pepper powder - 1tbsp
chicken kurma masala powder - 3tbsp
Curry leaves
Oil - 3tbsp
Coriander leaf -1 cup
Salt to taste

Cashew - 50g (SOAK FOR 1 HOUR AND MAKE A PASTE)

POUND - Green chilli 2, Coriander leaf 1 tbsp, Mint leaf 1 tbsp

SRI LANKAN POTATO CURRY INGREDIENTS –
Potato - 500g
Tomato -small 1 (50g)
Onion - 1 (75g)
Green chilli - 2
Garlic - 5 cloves
Coconut milk - 1 1/2 cup
Turmeric powder - 1/2 tsp
Chilli powder - 1/4 tsp
Fenugreek seed - 1/4 tsp
Salt to taste

FOR TEMPERING
oil - 1 1/2 tbsp
