Re-canning large portions of Nacho Cheese Sauce into individual portions. I can two different ways here in my Nesco Pressure Canner. The first using the Low Pressure setting and the second using the High Pressure setting, which is just like using a regular pressure canner. The second batch was four months after the first; wanted to see how it stored the first time. It did good. From what I read, recommended storage is 8 - 12 months; although some say longer. You need to be your own judge here, but I figure to just can one batch at a time, unlikely it will last longer than six months before it is all used.
