PUMPKIN PIE SPICE PANCAKES
Ingredients for about 10 pancakes
1 large egg
1 cup (130g) all-purpose or "plain" flour
3/4 cup (180 mls) whole milk
2 tablespoons melted butter
1 tablespoon sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon pumpkin pie spice
1 teaspoon vanilla extract

Grease and preheat a griddle, frying pan, or electric skillet. Beat the egg in a medium bowl, and then whisk in the remaining ingredients. (If the batter is too thick for your liking, thin it out with additional milk.) Pour the batter by the quarter cupful onto the hot skillet. When bubbles form on surface of the pancakes, flip them to brown the other side. Cool to room temperature and then pack into ziplock bags and freeze. To reheat, put 2 or 3 frozen pancakes on a microwave-safe plate, and heat for about 60 seconds in the microwave oven.

FREEZER-FRIENDLY BREAKFAST SANDWICHES
8 large eggs
1/4 cup (60ml) whole milk
1 tablespoon sour cream or Greek yogurt
1/2 teaspoon kosher salt
Grinds of black pepper
1/2 cup (112g) shredded mozzarella
6 English Muffins
Melted butter for brushing the English Muffins
6 slices MontereyJack cheese
Optional: thin slices of meat (ham, turkey, etc.)

Preheat oven to 350F/180C. Beat the eggs in a large bowl. Then whisk in the milk, sour cream, salt, pepper, and mozzarella cheese. Pour the mixture into a greased 9x13 baking dish. Bake until the mixture puffs and the top feels fairly dry to the touch (not wet) -- 18-25 minutes. Cool on a wire rack.

While the eggs are cooling, split the English muffins and brush their cut sides with the melted butter. Broil until lightly golden and crisp -- about 2 minutes (watch carefully so the muffins don't burn!).

Cut the eggs into 6 3-inch-diameter circles, or into 6 squares. On the bottom half of each muffin, add the egg, cheese, and 3 (or more or less) slices of meat. Top with the remaining muffin half. Wrap each sandwich in wax paper, aluminum foil, or cling film, and then freeze. To reheat, put a sandwich on a microwave-safe plate, and heat until the cheese melts -- about 60 seconds.
