Hey family!! In today's video I'm making a Springy Dinner & Dessert! The temperature is warming back up and Spring is, once again, in the air! Titus and the boys go fishing in the evening and I make a Jell-O Poke for dessert and a Cajun Chicken Bake for supper. One of them is not a winner with the family... Can you guess which one? 🤣

Cajun Chicken Bake:

Ingredients
Cajun Seasoning: (NOTE: I just used a store bought Cajun Seasoning.)
1 teaspoon paprika
¼ teaspoon cayenne pepper
¼ teaspoon oregano
¼ teaspoon thyme
¼ teaspoon salt
Chicken
2 bell peppers , small, thinly sliced (or use mini sweet peppers)
4 chicken breasts , small
4 cloves garlic , minced NOTE: I forgot about the garlic... Ooops!
6 oz cream cheese , cold, refrigerated, and sliced into 8 slices
½ cup cheddar cheese , shredded

Instructions
How to make Cajun chicken seasoning:
Combine all seasoning ingredients in a small bowl. Mix to combine.
Cajun chicken
Preheat oven to 375 F. NOTE: I went with 350 because my oven angry cooks sometimes and I didn't want to dry out the chicken! 🤣
Place thinly sliced bell peppers on the bottom of the casserole dish.
Place chicken breasts on top (so that the peppers will cook underneath the chicken).
Generously sprinkle Cajun seasoning all over the chicken breasts. You don't have to use all the seasoning. Top with minced garlic.
Top each chicken breast with 2 slices of cream cheese.
Top with shredded cheddar cheese.

Bake the chicken uncovered at 375 F in the preheated oven for 20-30 minutes until the chicken is cooked through.
Broil for 2 minutes, if desired.
To serve, scoop the bell peppers from underneath the chicken. Place them evenly around the chicken and on top.


Jello Poke Cake:
Ingredients:
1 box (18.25oz.) white cake mix
Ingredients listed on box to prepare cake
2 boxs (3 oz.) strawberry (Jello)
2 cups hot water
1 tub (8 oz.) Cool Whip, thawed
1large box or two small boxes instant vanilla pudding, and milk to make it(3 cups)

Bake the cake according to package directions using a 9x13-in. baking pan.
While the cake is baking prepare the vanilla pudding according to package directions. After the cake has baked, remove from the oven and allow to cool for 30 minutes. Using the handle end of a wooden spoon or a meat fork, poke cake every inch or so with the handle of wooden spoon or fork. There is no set number of holes, but you want plenty of places to fill. Mix the strawberry gelatin with 2 cups of hot water until dissolved. Pour the Jello evenly over the cake, trying to fill the holes as much as you can. Spread prepared vanilla pudding over the cake. Top with Cool Whip. Here you can add fruit or other topping if you want to. Refrigerate for at least 4 hours before serving.
Store leftovers in the refrigerator.
