These Oats Nankhatai are a perfect treat for this Diwali !! They are made with nutritious oats and they are free from refined sugar! Spices like cardamom and nutmeg lend a lovely aroma to these buttery cookies and their soft, melt in mouth texture make them truly irresistible 😋

INGREDIENTS
*1/4 cup Jaggery powder / गुड़ पाउडर
*1/3 cup Ghee / घी
*1 cup Oat flour / ओट्स आटा
*2 tbsp Gram flour / बेसन
*2 tbsp Semolina / रवा/ सूजी
*1/2 tsp Baking powder / बेकिंग पाउडर
*1/4 tsp Baking soda/ बेकिंग सोडा
*1/2 tsp Cardamom powder / एलाइचि पाउडर
*1/2 tsp grated Nutmeg / जाइफ़ल
*A pinch of salt / नमक
*some chopped Pistachios for garnishing / पिस्ता

INSTRUCTIONS
1- Add some oats in a blender and grind them into a fine powder to make oat flour. Keep it aside.
2- In a medium sized bowl, add ghee and jaggery and using a spoon/ whisk give a good mix till this mixture turns fluffy.
3- Now add in the oat flour, gram flour, semolina, cardamom powder, nutmeg, baking powder, baking soda, and salt. And mix really well till this mixture is well combined and turns into a soft dough. Keep the dough in the fridge for around 20 minutes. And Make sure to preheat the oven at 180°C/ 350°F for 10-15 before baking the nankhatais.
4- Now take a small portion from the dough, shape it into a ball to make nankhatai. Place it on a parchment paper lined baking tray and similarly make more nankhatais. Garnish them with pistachios and bake at 180°C/ 350°F for around 25 minutes. Let the nankhatais cool completely and enjoy!!
