My today’s recipe is about Mumbai ki special pav bhaji. If you’ve ever been to mumbai you must have seen, lanes around railway stations has so many pav bhaji sellers with a large tawa mounted on it.
So let’s bring that same taste today with this easy breezy recipe .
Full written recipe of pav bhaji
Prep time: 30-35 minutes
Cooking time: 30-35 minutes
Serves: 7-8 people
Ingredients:-
4 medium sized potatoes, roughly chopped
1 medium cauliflower, into florets or chopped roughly
2 red carrots, diced
1 green capsicum, diced
1 medium beetroot, chopped
1 bowl fresh peas or frozen
1 tsp oil
1 tsp butter
1 tsp cumin seeds
1 tsp pav bhaji masala
Salt to taste
1 cup water
100 gms butter
2 tsp refined oil
2 medium onions, finely chopped
3-4 green chillies, chopped
1 tsp ginger
3 medium tomatoes, chopped
Tomato purée, half a cup
Salt to taste
1 tsp red chilli powder
A bowl full of Fresh coriander leaves
Method-
Take a cooker, add oil and butter and cumin seeds, Once they splutter…
Add the first 6 veggies, pav bhaji masala, salt and water
Pressure cook for 5-6 whistles
You’ve to over cook the veggies
In another pan, add 100 gms butter, oil and Once it get a little hot, add onions, chillies and ginger
Sauté for 3-4 mins
Once the onions turn pink, add tomatoes and tomato purée
Sprinkle Some salt and let it cook till tomatoes get mushy
Add 1 tsp Kashmiri red chilli powder and add in the cooked veggies
Add in fresh coriander leaves and keep aside
Now take a tawa pan, add in the pav bhaji only how much you want to have
Make a well in between, add butter, pav bhaji masala, coriander leaves and mix
Add some water and mix again
Let it cook till water gets cooked
Take out in a bowl and add in a piece of butter on the top
For masala pav-
On the same tawa pan, add butter, red chilli powder, 1 tsp pav bhaji gravy and pav
Coat the masala around pav and roast it well
You can have it as it as well as with bhaji, onions and green chutney
