Tasty Chicken Roast Recipe | Kerala Style Chicken Ularthiyathu

Chicken ularthiyathu is a popular chicken dish from Kerala cuisine. Chicken is cooked with onions and a variety of spices including black pepper and garam masala, before reducing to a roast consistency to absorb all the flavours. Fresh coconut chips are added to this dry curry to give a crunchy texture and that forms the highlight of this dish. Chicken ularthiyathu goes well with rice and curry. It is moist enough to pair beautifully with Kerala porota or chapati.

Ingredients :

500 gms Chicken (with bones) - cleaned & washed well
3 tbsp Coconut Oil (use as per your diet restrictions)
30 gms Coconut Slices (optional but recommended)
2 medium size (180 gms) Onions (finely chopped)
2 sprigs Curry Leaves (karee patte)
1 inch (12 gms) Ginger (finely chopped)
20 nos (30 gms) Garlic (finely chopped)
3 nos Green Chillies (finely chopped)
½ tsp Turmeric Powder
1.5 tbsp Kashmiri Chilli Powder (use as per your spice preference)
1 tbsp Coriander Powder (dhania powder)
1 tsp Fennel Seeds Powder (saunf powder)
½ tsp Garam Masala Powder
½ tsp Black Pepper Powder (kali mirch powder)
2 medium size (120 gms) Tomato Puree (grind 2 tomatoes to make puree)
½ tsp Salt (use as per your taste)
½ tsp Garam Masala Powder
½ tsp Black Pepper Powder (kali mirch powder)
2 sprigs Curry Leaves (kari patte)
1 tbsp Coconut Oil (use as per your diet restrictions)


Note : tsp is teaspoon
tbsp is tablespoon
Use Oil as per your diet restrictions
Use Chillies as per your spice preference
Always wash curry leaves & coriander leaves before use
