This is a delicious dish that requires minimum prep & comes together in no time. It’s also healthy & packed full of veggies. Let’s make this.

1 tbsp oil
1 tbsp garlic, finely chopped
1 tbsp ginger, finely chopped
1/2 carrot, finely chopped
1/4 red bell pepper, finely chopped
4-5 mushrooms, finely chopped
1/4 cup brocolli, finely chopped
50 gms tofu, cut into small cubes
Handful of spring onion, finely chopped
1 tbsp light soy sauce
1 tbsp chilli oil
5-6 rice papers
Heat oil in a pan. Add in the ginger & garlic & saute for 30 seconds. Add in all the veggies alongwith the tofu, soy sauce, chilli oil & saute for 3-4 minutes. Let the mixture cool slightly. Dip your rice paper in water & spread it on a board. Add the filling to the rice paper & fold it tightly. You can serve this as is or lightly saute them in some oil in a pan to add a little crunch to the rolls. Serve hot with some sweet chilli sauce & dig in.!
