Since Durga Puja is here, let’s celebrate with one of Bengal’s most beloved sweets – Sandesh. Today I’m going to share with you a Pujo Special Melt-in-Mouth Sandesh Recipe that’s soft, rich, and absolutely divine. With just a few simple ingredients, you can prepare this authentic Bengali delight right at home!

Ingredients ✨ ☘️

Full cream milk – 2.5 litres

Vinegar – ¼ cup

Water – ½ cup (to mix with vinegar)

A few strands of Saffron

Milk – ¾ cup

Condensed milk – ½ cup (or adjust as per sweetness)

Cardamom powder – ½ tsp

Method ✨ ☘️

1. Boil the milk: In a kadhai, pour the full cream milk and bring it to a boil.

2. Curdle the milk: Once boiled, lower the flame. In a small bowl, mix vinegar with water and gradually add it to the milk, stirring continuously until the milk curdles into fresh chhena (paneer).

3. Strain: Pour the mixture into a strainer lined with muslin cloth to separate the whey. Tie it and let it rest for 30 minutes.

4. Knead the chhena: After 30 minutes, transfer the chhena to a mixing bowl. Knead well for 5–8 minutes until smooth.

5. Prepare the mixture: Add ¾ cup milk, condensed milk, and cardamom powder. Whisk until smooth.

6. Cook: Pour the mixture into a non-stick pan, add a few strands of Saffron and cook on low heat for about 3 minutes, stirring continuously, until it slightly thickens.

7. Set: Transfer into a square mould lined with butter paper. Smoothen the top and let it rest for 1 hour at room temperature.

8. Chill and serve: Keep in the refrigerator for 1 hour, then cut into squares and enjoy this melt-in-mouth Pujo special Sandesh.
