I make a very good 32k GameBoy flash cart on a solderless breadboard. And it works! MOSTLY!

Parts list:
flash memory: SST39SF040 32-pin PDIP package. You could also use the 1Mbit and 2Mbit version. Just make sure it's the 5V version.

22 gauge solid wire hookup wire
40 pin rainbow ribon cable
GameBoy cartridge breakout board
homemade ribon cable to breadboard adapter
TL866II plus
some GameBoys

About the cartridge breakout board:
I ordered mine from OSHPark using this: https://oshpark.com/shared_projects/p...
If you do order one from there, or from any PCB manufacturer make sure to get the 0.8mm thickness. I got mine too thick and it doesn't fit in a cartridge shell. That's why I have post-it notes stuck to it.

About the programmer (TL866II plus):
It looks like you can still find these, but I heard they were discontinued and replaced by maybe the T48 Universal Programmer.

Programmer software:
On windows there's software from the manufacturer http://autoelectric.cn/EN/TL866_main.....
On linux, I'm using minipro https://gitlab.com/DavidGriffith/minipro.
