高速煲家鄉蕃薯飯

材料:
雞蛋黃蕃薯(大)1個
急凍免治豬肉1磅
冬菇(大)5隻(已浸軟)
乾蔥頭4個
蔥1條
蝦乾20克
臘腸2條
白米3膠嘜

處理:
1. 急凍豬肉,連包裝袋,清水解凍。
2. 蝦乾,清水浸5分鐘。
3. 豬肉已解凍,除去包裝袋,放碗內。
4. 臘腸,用大滾水淥一淥,去除表面油分。
5. 乾蔥頭,去皮,清水洗乾淨,切片。
6. 蔥,切去根部,清水洗乾淨,切粒,放碗內。
7. 臘腸,切細粒。
8. 冬菇,去椗,切粒。
9. 蕃薯,清水洗乾淨,去皮,切粒。
10. 白米,清水浸。

烹調:
1. 大火在鑊內燒熱油3湯匙。
2. 爆香乾蔥頭,擎乾油在碗內,油放一邊備用。
3. 大火在鑊內爆香臘腸、冬菇及蕃薯,中間撥空一個位置,放豬肉在中間。
4. 蝦乾已浸好,擎乾水,放鑊內炒勻。
5. 白米已浸好,清水洗乾淨,擎乾水。
6. 配料已爆香,轉慢火,加入調味料:
a. 蠔油1湯匙
b. 生抽半湯匙
c. 胡椒粉1茶匙
d. 糖半湯匙
轉大火,炒勻,加入白米,炒勻。
7. 預備好高速煲。
8. 所有材料,放入煲內,加入清水大約280毫升,與白米同一水平。
9. 用“正常煮飯”程序,開始煮。
10. 煮好,加入蔥粒及乾蔥油,撈勻。
11. 完成,上碟,可享用。

Home-made sweet potato rice with high speed cooker

Ingredients:
Sweet potato (large) 1 No.
Frozen minced pork meat 1 lb
Mushrooms 5 Nos. (Already soaked well)
Shallots 4 Nos.
Green onion 1 No.
Dried sea prawns 20g
Chinese sausages 2 Nos.
Plain rice 3 plastic cups

Preparation:
1. Frozen pork, defrost with plastics in tap water.
2. Dried sea prawns, soak in tap water for 5 minutes.
3. Pork has been defrosted, remove plastics, put in a bowl.
4. Chinese sausages, soak in boiled~up water, to remove the oil on surface.
5. Shallots, get them peeled. Rinse with tap water. Get them sliced.
6. Green onion, cut the root. Rinse with tap water. Get it diced and put in a bowl.
7. Chinese sausages, cut in small cubes.
8. Mushrooms, cut the anchors. Dice in cubes.
9. Sweet potatoes, get them rinsed and peeled. Dice in cubes.
10. Plain rice, soak in tap water.

Steps:
1. Heat up 3 tbsp of oil at high flame in wok.
2. Fry the shallots well. Drain the oil in a bowl for use later.
3. Fry the Chinese sausages, mushrooms and sweet potatoes well at high flame in wok. Make a space at the centre of wok. Put pork at the centre.
4. Dried sea prawns have been soaked well, get them drained. Put in wok and fry well.
5. Plain rice has been soaked well, rinse with tap water. Drain.
6. Ingredients have been fried well, turn to low flame. Add seasoning:
a. Oyster sauce 1 tbsp
b. Light soya sauce 0.5 tbsp
c. Pepper 1 tsp
d. Sugar 0.5 tbsp
Turn to high flame. Fry well. Add in plain rice. Fry well.
7. Get ready for a high speed cooker.
8. All ingredients, put in the cooker. Add in 280ml of water up to the level of the rice.
9. Use "standard cooking" mode to cook the rice.
10. Finish. Add in green onion cubes and shallots oil. Mix well.
11. Complete. Put on plate. Serve.

Simply use frozen meat, to make yummy rice. Put all ingredients in a high speed cooker. You can get it too.
