Moringa Poha

This moringa poha is not just a flavorful twist to your regular poha but also an extremely nutritious addition to your diet. Have you ever thought of adding moringa leaves to poha? It’s a fantastic way to incorporate these power-packed leaves into your meals, especially when they are in season and freshly available—whether from the market or right from your home garden. And I don’t have to tell you that moringa leaves are often called magical or wonder leaves for a reason. They are loaded with nutrients, and this recipe is a simple yet delicious way to enjoy their benefits!

Ingredients
2 cup Thick poha
1 cup moringa leaves
2tbsp peanuts
1 green chilli
1 red chilli
1 tbsp oil
1 tsp urad dal
1 tsp cumin
1/2 tsp mustard
1/2 tsp turmeric
1/2 tsp hing
Curry leaves (optional)
Chopped coriander leaves
Salt as per taste
1 tsp sugar
1 chopped onion
1/2 lemon
1/4 cup freshly grated coconut

In a bowl, add thick poha, wash it in water, and rinse it well. Add salt and sugar, mix it properly, and keep it aside. In a pan, heat oil fry peanuts and add mustard seeds, cumin seeds, chopped onion, green chili, and dry red chili. Let it sauté until the onions turn soft. Add turmeric powder and mix well. Now, add freshly cleaned moringa leaves and sauté for 1 to 2 minutes. Then, add the poha mixture and mix everything well. Turn off the heat, squeeze half a lemon, garnish with coriander leaves and freshly grated coconut, and give it a final mix. Serve warm and enjoy!


🌽🧆Moringa Dal/ Nugge Soppu Thove/ ನುಗ್ಗೆ ಸೊಪ್ಪು ತೊವ್ವೆ

A staple across South India, this simple yet flavorful Nugge Soppo Thove (Drumstick Leaves Dal) is packed with nutrition! Known by different names in every region, this dish is a powerhouse of iron, calcium, protein, fiber, and antioxidants—making it perfect for immunity, digestion, and overall health. Serve it with hot rice and ghee for a wholesome, nourishing meal! 🍛✨

Ingredients:
1/4 cup toor dal
1/4 cup masoor dal
1 tomato
1 onion
5-6 garlic clove
1 tsp turmeric
1 cup water to cook

In a pressure cook add all the above ingredients and cook

1 cup fresh moringa leaves

Tempering:
1 tbsp oil
2 red chilli
1 tsp urad dal
1/2 tsp musterd
1 tsp cumin
1 tsp hing
2 tsp salt( as per taste)

In a pan give tempering using above ingredients, then add fresh moringa leaves
Then add cooked dal.
Add water according to the consistently required
Let it simmer for few minutes..
Enjoy with steamed rice
