Best Dessert Cocktail | POMEGRANATE COCONUT COCKTAIL RECIPE

This decadent Valentines Day dessert cocktail may be the very best dessert cocktail there is. Pomegranate, coconut, white chocolate and a tiny bit of citrus really make this recipe shine. And of course, pink. Because, pink. Valentines day doesn't have to be all about your significant other! It can be about coconut. And rum. And coconut rum.

Lets talk about pomegranate and pomegranate cocktail for a second... grenadine is just simple syrup made with pomegranate juice instead of water, and a couple extra ingredients. So stop abusing yourself with that sickeningly sweet stuff you find in the store, and make your own!! It'll change your life... or at least your cocktails. ;)

COCONUT CRUSH:

2oz Coconut Rum (I recommend Shipwreck, by Brinley Gold)
2oz Coconut Cream (unsweetened)
.5oz Cointreau
.5oz Grenadine syrup (recipe below)
.5oz Lemon Juice

White Chocolate and rose petals to garnish, throw on some Marvin Gaye and thank me on Feb 15th ;)

HOMEMADE GRENANDINE
1c Pomegranate Juice
1c Sugar
1tbs Cointreau
1tbs Balsamic Vinegar (the thick syrupy stuff)

Stir juice and sugar over a medium heat until sugar is dissolved. Add Cointreau and Balsamic, stir and let simmer for a few minutes. Remove to a jar and let cool before using.
