How to shuck an oyster.
Connor Doyle from Plymouth Rock Oyster Growers in Plymouth Massachusetts demonstrates the proper way to shuck and present a fresh oyster.
"Hi, Connor Doyle with Plymouth Rock Oyster Growers. I’m here to show you how to shuck an oyster. All you need is an oyster, a glove and a knife.
First you want to hold the oyster in the palm of your hand. Choke up on the knife a little bit. Right here you've got the hinge. You just want to get your knife tip in there and then wiggle it in. It helps to move the oyster and keep the knife tip stationary kind of avoid stabbing yourself in the pop. Once you get it in there, firmly knife should be able to sit like, that you're gonna torque it open.
Okay you now have the hinge popped, take your knife out get rid of any shell debris, slip it back in turn the oyster and you're gonna drag the knife along the flat shell here to cut the abductor muscle from that flat shell.
Remove the shell. Get rid of any bits of shell that you had while shucking. Then you need to cut the abductor muscle on the bottom of the half shell like so.
And then you just flip for presentation. Now you just shucked your first oyster, it's time to enjoy!
