French Roll
8 servings
Pre-ferment
Bread flour 300g
Water 170ml
Instant dry yeast a pinch

Main dough
Bread flour 75g
Salt 4g
Instant dry yeast 1g
Water 30ml

1. Add all the ingredients for the Pre-ferment to a clean bowl and mix well without lumps. Cover the top and let it rise at room temperature until its volume increases by at least 3 times. (Appropriate room temperature is 24-26 degrees / about 12 hours)
2. Add all the ingredients for the main dough except the water to a clean bowl. Add to bowl 1 and adjust the consistency of the dough by adding water in two or three portions.
3. Transfer the dough to the workbench and knead by hand. (About 10 minutes)
4. Transfer the dough to a clean bowl and let it rise for the first time in a warm place for about 1 hour.
5. Divide the dough into 8 pieces. Cover the top and let it rest for 10 minutes.
6. After 10 minutes, shape the dough. And let it rise for 40-50 minutes in a warm place.
7. Before baking, score top. Spray water generously on the surface of the dough for 2 times.
8. Bake in a preheated oven at 200 degrees for about 20-25 minutes.
9. Let the baked bread cool sufficiently on the tray before transferring it.
