Grandma Beasley's Chocolate Oatmeal Cookies (Nut free, Top Nine Allergen-free)
Ingredients:
3 cups quick oatmeal (gluten free oats if you need them)
3 Tbsp cocoa powder
2 cups sugar
½ cup dairy free milk of your choice (we use soy)
1 tsp. vanilla (can omit if you want)
½ cup coconut oil, a solid oil like palm oil, or dairy free butter alternative*

An oil that is solid at room temperature will make the cookies firmer. Other plant butter sticks are delicious but may make a chewier cookie. Either way, these cookies are delicious.

Directions:
1. Bring the cocoa, sugar, dairy free milk, and oil to a rolling boil. Let it boil for about a minute, stirring continuously.
2. Once it comes to a boil, off heat add the vanilla extract and stir in the oatmeal.
3. Drop cookie mixture by the teaspoon onto wax or parchment paper and cool in the fridge until set.
