How to make Indian meal prep (quick, healthy, and vegetarian)

In this video, I’m sharing my spin on meal prep: Indian Meal Prep! And bonus -- this recipe just happens to be vegetarian. 🔥

Today, I'll share my go-to meal prep combo: basmati rice, dal (made in the Instant Pot!), and crispy okra fry. This entire meal prep is incredibly easy, takes just 2 hours to make, and yields 5-6 servings.

〰️ ingredients 〰️
Dal:
1 cup of toor dal
3 cups of water
3/4 onion
4 cloves of garlic
1 tomato
green chili to taste (start with 1/4 jalapeno)
1/2 tsp chana dal
1/2 tsp urad dal
1 tsp cumin
1 tsp mustard seeds
1/8 tsp hing
4 dry red chilis, or 1 tsp red chili flakes
1/2 tsp turmeric
1/2 tsp of salt, to taste

Okra Fry:
1 lb okra (fresh or frozen), or any vegetable
2 1/4 onion
6 cloves of garlic
1 tsp chana dal
1 tsp urad dal
3/4 tsp cumin
1/8 tsp hing
1/2 tsp turmeric
salt to taste
