recipes

1.besan murukku

1 cup rice flour
1/2 cup besan
1 tsp chili powder or as preferred
1/4 tsp crushed ajwain
pinch of turmeric powder
pinch of asafoetida powder
salt as required
1.5 tbsp butter or
3 tbsp hot oil
oil to deep fry
mix the flours well, then add butter and make a crumble of the flours , add ajwain , chili powder, salt, , asafoetida powder , add water slowly to make a smooth firm dough , shape into round murukku with help of a muruku press or press directly intohot oil as sticks .
make sure oil is heated , well,drop a pinch of dough , it must sizzle and come up immediately, then reduce flame to medium and press the dough into hot oil , allow to cook both sides, these murukku will become crisp on cooling.

2. Ulundh thengoyal

1 1/4 cup rice flour
1/4 cup udad dal flour ( store bought or prepared at home by dry roasting udad dal dal, cool and grind to fine powder, sieve it well )
pinch of asafoetida powder, s alt
1/2 tsp cumin seeds or pepper
3 tbsp hot oil or 1 tbsp butter

3. Butter murukku

1 cup rice flour
2 tbsp pottukadalai / fried gram powder
2 tbsp besan/chickpea flour
1 .5 tbsp butter
1 tsp sesame seeds
1/2 tsp cumin seeds
salt as required
A pinch of asafoetida powder
Oil for deep frying
A wooden or steel press with a star shaped plate.

4. Kara sev

1 cup besan flour/ chickpea flour
1 cup rice flour ( idiyappam lfour will do.)
Pinch of asafoetida powder
1 tsp to 2.5 tsp cracked pepper can be used ( as we dont use any other spice agent , so 2.5 tsp pepper can be used )
A pinch of carom seeds ( ajwain ) optional
salt as needed
2 tbsp softened butter or 3 tbsp hot oil
Oil to deep fry.

5.Ribbon pakoda

Ingredients
1 cup rice flour
1 cup besan / chickpea flour
Salt
2 tsp Red chili powder
Big pinch of asafoetida powder
1 tsp sesame seeds3
tbsp hot oil

6.Omapodi sev

1 cup chickpea flour /besan flour
4 tbsp rice flour
pinch of chili powder
pinch of turmeric powder
salt
4 tbsp hot oil
asafoetida powder
1 tbsp ajwain /carom seeds mixed in warm water and used to make the dough .
oil for deep frying

7. Boondi
1 cup chickpeaflour/besan flour
4 tbsp rice flour
pinch pf asafoetida powder
salt
4 tbsp hot oil

8.Other Ingredients

Medium thick poha deep fried or roasted
Handful of peanuts deep fried
Curry leaves
Salt
Chili powder
Pinch of turmeric powder
Big pinch of asafoetida powder dry coconut slices deep fried
cashews deep fried ) optional )
