Let's cook in Malaysia!
✳︎The pickled daikon
Ingredients

Daikon radish: 1 (peeled, approximately 1 kg)
Vinegar: 100 cc
Sugar: 70 g
Salt: 25 g
Red chili pepper: to taste
Kombu (dried kelp): a few pieces (about 5 cm x 5 cm each)

Instructions
1.Prepare the Daikon
Peel the daikon and cut it into 5mm thick. You can also cut the rounds in half or into your desired size.
2.Salt the Daikon
Rub the salt onto the daikon pieces, making sure to coat them evenly. Let the salted daikon sit for 30 minutes to 1 hour to draw out excess moisture.
3.Rinse off the Salt
After the daikon has released some moisture, lightly rinse off the salt and pat the pieces dry.
4.Prepare the Pickling Liquid
n a bowl, mix the vinegar and sugar until the sugar is fully dissolved.
5.Pickling Process
Place the daikon pieces into a clean container and pour the pickling liquid over them.
Add the red chili pepper and kombu. Adjust the amount of chili pepper to your taste. Kombu adds flavor, so a few pieces are sufficient.
6.Cover the container and refrigerate for 1 day. The pickles will develop more flavor as they sit.

✳︎Teriyaki Chicken

Ingredients
Soy sauce: 50 cc
Vinegar: 50 cc
Sugar: 30–40 g
Chicken thigh: 1 piece

Instructions
1.Prepare the Marinade
Measure 50 cc of soy sauce and 50 cc of vinegar into a bowl. Add 30 to 40 g of sugar and mix until the sugar is completely dissolved.
2.Cook the Chicken
Spread the chicken thigh in a pot that fits it well. Pour the marinade over the chicken, making sure the skin side is facing down.
Bring the pot to a boil over high heat. Once it starts boiling, immediately reduce the heat to low and let it simmer for 10 minutes. Do not cover the pot.
3.Turn the Chicken
After 10 minutes, the chicken should look like the photo. Flip the chicken over so that the skin side is facing up.
4.Simmer the Chicken
Continue to simmer for another 10 minutes.
5.Finish Cooking
Finally, flip the chicken back to skin side down and cook for another 2 to 3 minutes, being careful not to let it burn. The dish is now ready!
