Rosella Jam Recipe

Ingredients
Rosella fruits (approx. about 60 will give you two medium jam jars)
Sugar
Lemon

Method
1. Harvest desired amount of rosellas and rinse in bucket.
2. Separate red calyx from seed pods and thoroughly rinse each separately.
3. Place seed pods in a medium saucepan, cover with water (1 inch above seed pods), bring to boil and cook for 30 mins.
4. Strain and reserve juice from seed pods. The seed pods can now be put into the compost.
5. Place rosella calyx into the saucepan and add reserved juice (this has the pectin in it).
6. Boil for 20 mins or until pulp is formed.
7. Measure the volume of cooked pulp, return to pan and add juice of one lemon or more to taste.
8. Add equal amount of white sugar to pulp (3 cups pulp = 3 cups sugar).
9. Bring to boil and cook until jam is thick.
10. Pour into sterilised jars.
