Butter chicken is a popular Indian dish that originated in the northern part of India, specifically in the city of Delhi. Butter chicken is enjoyed all over the world and is often considered one of the most popular dishes in Indian cuisine.

Butter Chicken Gravy

Ingredients :
9-10 tomatoes
2-3 onions
70gm garlic
30gms ginger
50-100g kaju
1 cup milk
1 cup butter
6-7 choti elaichi
3 tbsp dhaniya powder
1tbsp degi mirch
2-3 laung
2-3 sticks dalchini
2tbsp kasuri methi
3-4 spoons honey
Salt
Some water


Add into the cooker and boil for 3 for whistles, let the steam come out.

Blend into a paste and strain everything to get that silky smooth gravy.

Now on a pan add some oil and some butter and add 1 tbsp very finely chopped garlic. Once the garlic turns a little brown then add degi mirch powder and let the color bleed and add it to the gravy immediately.

Now add the chicken to the gravy and let it simmer for at least 10 minutes.

Adjust the seasoning with salt

In the end, add some butter and cream and then smoke with garlic and lots of butter and add that butter back into the gravy.

Garnish with Kasuri methi

Tandoori chicken


So basically there are no specific measurements here, the more the better.

Ingredients
Lemon
Curd
Ginger
Garlic
Green chilli
Red chilli
Chat masala
Besan
Mustard oil
Kasuri methi
Haldi

And butter for basting


Essential Preps

Soak sabut red chillies in water for 2-3 hours and drain the water And add some drops of oil and ek acha sundar paste bana lo

Mustard oil halka garam karo and us mein red chilli powder dalo for the amazing color bleed and use this oil later in the recipe

Kasuri methi ko halka dry kar ke powder bana lo

Tandoori masala
1 spoon jeera
1/2 spoon dhaniya
1-2 pc laung
Chota pc dalchini
2 sabut red chilli
1 javitri
1/6 spoon black pepper
Pinch of salt
Pinch of chat masala

Halka sa roast and bana lo powder

1st Marination
Score the chicken thighs (make small cuts)

Salt, pepper, turmeric and lemon rub

Stay in for 4 hours

2nd Marination
Red chilli paste (more for better color and spice)
Ginger Garlic and Chilli Paste

Stay for around 4 hours

3rd Marination
Mustard Oil (halka sa garam karna hai mustard oil and us mein degi mirch dalni hai and color bleed hone dena hai and immediately chicken mein)
Hung Curd (not a single drop of water should be there)
1 spoon besan
Tandoori Powder (bht zada nai)
Kasuri Methi powder
Chat Masala

Right before cooking
After massaging well, light a coal and place it in between the entire chicken add a spoon of ghee or oil and cover well and smoke for 15 minutes

Now when it comes to roasting it needs a very high temperature

So either a tandoor or a 10 minute pre-heated oven at 220 and then bake at 190-200 for 15 minutes then turn and apply some butter/oil and bake for another 15 minutes at 180
