Dave isn't only good at fixing things, but he is a good cook too. He has a couple of great recipes and is sharing one that came straight from Poland from his grandmother (Babcia). Chef Dave makes the golumpkis (cabbage rolls) low carb too. Recipe listed below.

👩‍🍳 LOW CARB GALUMPKIS RECIPE (Stuffed cabbage rolls)
📝Ingredients: (makes about 40 rolls)
***Meat mixture in separate bowl:
1 pound ground beef (we prefer 93% for this recipe)
1 pound ground pork
2 - 10 oz bags of frozen riced cauliflower (or 1½ to 2 cups cooked rice)
2 eggs
1 C of chopped onions
1 Tbl salt
1 tsp black pepper
1 tsp red pepper flakes (optional)

***Sauce mixture in separate bowl:
2 - 10.75 oz cans for condensed tomato soup
64 oz Spicy Hot V8 Vegetable Juice
2 - 14.5 oz cans of diced tomatoes

*** 2 Large heads of cabbage.

✅ Instructions:
*** Meat mixture: Add ½ cup of sauce to meat mixture. Then mix all ingredients together in separate bowl.
*** Sauce mixture: Mix all ingredients in separate bowl.
*** Cabbage:
Core cabbage.
In large pot, fill with water and bring to a boil.
Place cabbage in pot.
Cover with lid and boil for 20 minutes or until tender.
Pull tender outer leaves off cabbage head and try not to rip leaves.
Place remaining head back in boiling water to tenderize additional leaves on head for about another 10 minutes.
You will have left over cabbage after you use all the large leaves.

✅ Fill and Roll Instructions:
Take cabbage leaf cup side up and place a small scoop of meat mixture next to core (portion meat amount with size of leaf).
Roll core towards the top of the leaf and fold sides in about half way….like a burrito.

✅Layer left over cabbage in bottom of large casserole dish or Dutch oven pot.
Place cabbage rolls next to each other in a single layer.
Pour about 2 cups of sauce over layer of rolls.
Layer left over cabbage on top of rolls/sauce and repeat layers.
Pour remain sauce on top.
Cover and bake at 350 degrees for 2 ½ hours.
Note: This recipe makes about 40 rolls. Most people eat 2-3 rolls. You can cut the recipe in half and reduce cooking time to 1 ½ to 2 hours. Check rolls by cutting into one and seeing if the meat is cooked through. It’s better to be overcooked than under-cooked. Can be frozen and reheated in the microwave. We have not tried this in the Instant Pot yet.
