Coorgi Style Chicken Masala or Kodava Style Chicken in Black Masala, is an iconic dish from Coorg.

Kodava Style Chicken Masala is a rich, spicy, semi-dry chicken preparation from the Coorg region of Karnataka. This dish is characterized by the use of Kachampuli (Garcinia Cambooge) which is a souring agent. The other speciality of this dish is the Coorgi Black Masala Powder. This dark aromatic spicy masala powder is the secret behind the excellent Coorgi dry dishes prepared with Chicken, Mutton or Pork.

Ingredients :

500 gms Chicken (with bones & fats)

Marination :

½ tsp Turmeric Powder
½ tsp Salt


For Black Masala Powder :

1 tbsp Coriander Seeds (sabut dhania)
1 tbsp Black Peppercorns (kalimirch)
½ tsp Mustard Seeds (rai)
½ tsp Cumin Seeds (jeera)
½ tsp Fennel Seeds (saunf)
¼ tsp Fenugreek Seeds (methi dana)
1 no. Bay Leaf (tej patta)
1 inch stick Cinnamon (dalchini)
3 nos. Cloves (lavang)

Other Ingredients :

3 tbsp Vegetable Oil (Sunflower Oil)
1 large size (130 gms) Onion (finely chopped)
1 tbsp Ginger Garlic Paste
2 to 3 Green Chillies (chopped)
2 sprigs Curry Leaves (kadipatta)
2 to 3 sprigs Coriander Leaves (finely chopped)
¼ tsp Garcinia Cambooge Paste (link to purchase is given below) (It's also called Malabar Tamarind)
2 to 3 sprigs Coriander Leaves (finely chopped) for garnishing

Note : tsp is teaspoon
tbsp is tablespoon
