Multigrain Tempeh Sandwich (PCOD-friendly, high-protein):
Ingredients:
Tempeh – 100g (crumbled or cubed)
Multigrain bread – 2 slices
Vegetables – onion, capsicum, carrot (finely chopped)
Spices – turmeric, coriander powder, red chilli powder, black pepper, chaat masala, salt
Oil – 1 tsp
Lemon juice – to finish
Cucumber slices – for layering
Chutney Spread (blend together):
2 tbsp hung curd
Handful coriander leaves
2 small garlic clove
2 green chilli
½ tomato
Salt & lemon juice
Method:
Make the chutney: Blend all chutney ingredients into a smooth spread.
Cook the filling:
Heat oil in a pan. Add onion, capsicum, carrot – sauté 2 mins.
Add tempeh, all spices, salt. Mix well, cook till dry and flavorful.
Finish with lemon juice.
Assemble the sandwich:
Spread curd chutney on both bread slices.
Add cucumber slices + tempeh filling.
Close, press, and toast or grill until golden.
