CHINIOT KA SADA PULAO Written Recipe :

Ingredients :
Mutton 1 kg
Green chilies small 10
Black cardamom 2
Black peppercorns 10
Cloves 1 tsp
Cinnamon 1 stick
Cumin seeds 1 tsp
Ginger garlic 2 tbsp
Salt 3 tsp
Chili powder 1 tbsp
Dry plump soaked 6-8
Tomatoes chopped 3
Oil ½ cup
Onion chopped 2
Rice soaked for 30 mins 750 gm
Water 4 cups

METHOD :
In a pot put 4 cups of water, mutton, green chilies, cardamom, black peppercorns, cloves, cumin seeds, ginger garlic, salt, red chili powder, and dried plums, cover and cook till mutton tender, add tomatoes. In another pan, heat oil, fry onions till light golden, add ½ cup water, and keep aside, when the mutton is tender add it to the brown onions, and cook for 2 mins till oil comes on top, add 3 cups water and bring boil, add salt and the soaked rice, cook for 15 mins, after water dries, leave it on dum for 10 mins, serve with kachumber and raita.

UMME ALI BAKED CUSTARD Written Recipe :

Ingredients :
Bakar Khani crushed 12
Raisin soaked 2 tbsp
Almonds sliced 3 tbsp
Pistachio sliced 3 tbsp
Desiccated coconut 3 tbsp

Ingredients for Milk Mixture :
Milk 1 kg
Sugar ¼ cup
Condensed milk ½ cup
Cream ¾ packets
Milk powder ½ cup
Vanilla essence few drops

Ingredients for Custard Layer :
Milk 2 ½ cup
Vanilla custard powder 2 tbsp
Sugar 3 tbsp
Vanilla essence 2 drops
Butterscotch essence 2 drops

METHOD :
Put it all together in a saucepan, and cook the custard as instructed. For garnish add fresh cream and some more nuts

METHOD :
Roughly break bakar khani into 5-6 pcs in a large casserole dish, sprinkle soaked raisins, roasted almonds pistachio, and coconuts, put all the ingredients under milk mixture in a pot except essence, and bring to a boil, keep stirring, cook the milk mixture on medium flame till it reduces to ¾, carefully pour this hot milk mixture over the prepared layers of bakar khani and nuts in the dish, finally spread the cooked custard on top, now place the dish in a preheated oven on 180 D for 10 mins, pour fresh cream along the edges of the dish to garnish and spread some more nuts in the center, serve hot
