Beef and Mushroom Empanada Ingredients:
DOUGH:
3 cups all-purpose flour
1/4 teaspoon salt
1 cup butter, cubed, chilled
1 egg, room temperature
4 tablespoons water
FILLING:
1 tablespoon olive oil
2 cups portobello mushrooms, diced
1 pound ground beef
1 small onion, diced
1 large carrot, diced
1/2 teaspoon black pepper
2 garlic cloves, diced
1 teaspoon cumin
1 teaspoon oregano
1 cup tomato puree
1/2 cup pitted green olives, diced
CHIMMICHURRI:
1/2 cup fresh parsley, diced
2 tablespoons fresh oregano, diced
1 spring onion, diced
1 garlic clove, diced
1 small red chili pepper, seeded and deveined, diced
2 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
1/2 cup extra virgin olive oil
Beef and Mushroom Empanada Steps:
DOUGH:
1. Add the flour and salt to a bowl and mix.
2. Add the butter and egg to the dry ingredients and cut with a pastry cutter. Then mix with hands.
3. Add 4 tablespoons of water to the mixture, 1 teaspoon at a time until it starts to come together and form a ball.
4. Knead dough on a floured surface, form into a smooth ball. Wrap with plastic wrap.
5. Refrigerate for 30 minutes.
FILLING:
1. Add olive oil to a large pan over medium heat.
2. Add the mushrooms, stirring often, until the start to brown.
3. Add the beef, onion, carrot, & pepper and cook while breaking up the meat until browned.
4. Stir in the garlic, cumin and oregano and cook for 2 minutes.
5. Stir in the tomato puree and simmer for 5 minutes until thickened.
6. Remove from heat, transfer to a bowl, and stir in the green olives.
7. Allow mixture to cool to room temperature.
8. Line a large baking sheet with parchment paper and preheat oven to 350 degrees F.
9. Roll the dough out on a floured surface until 1/8 inch thick. Cut out 6 inch circles.
10. Put meat in the center of the dough circle, brush egg wash around edges and fold in half.
11. Press edge with a fork to seal.
12. Line them up on the baking sheet and brush with egg wash.
13. Bake for 25-30 minutes or until golden brown.
CHIMMICHURRI:
1. Mix the parsley, oregano, spring onion, garlic clove, red chili pepper, red wine vinegar, and lemon juice in a bowl.
2. Add olive oil and whisk.
3. Set aside.
