I originally recorded this live-ish for VegFest UK 2020 due to COVID-19 restrictions, but that means you get to watch along too! When writing my book, I did heaps of testing to find out which was the best vegan salmon substitute and despite the internet claiming it is carrots.. but I reckon tomatoes are the winner! These marinated tomatoes make for a quick and easy smoked lox substitute, and with the dill cream cheese schmear on a bagel.. this might be your new favourite plant based recipe for breakfast on the go. Hope you love it!
