Sparkling Shortbread Cookies (Sablés Diamants)

Makes: About 50 cookies
Active Time: 30 minutes
Chilling Time: Minimum 2 hours

Equipment:
Baking sheets lined with silicone baking mats or parchment paper

Ingredients:
190 g (1 ¾ sticks / 6.5 oz.) unsalted butter, softened
90 g (¾ cup / 3 oz.) confectioners’ sugar (powdered sugar)
20 g (1 tbsp / 0.75 oz.) egg yolk (about 1 yolk)
1 vanilla bean, split lengthwise, seeds scraped
275 g (2 ¼ cups / 9.5 oz.) all-purpose flour, sifted
250 g (1 ¼ cups / 8.8 oz.) granulated sugar, for coating

Instructions:

1. Cream the Butter & Sugar
In a mixing bowl, beat the softened butter and confectioners’ sugar together until smooth and creamy.

2. Incorporate Egg & Vanilla
Mix in the egg yolk and vanilla bean seeds until fully combined.

3. Form the Dough
Gradually add the sifted flour and mix until a smooth dough forms.

4. Shape & Chill
Divide the dough into two equal portions. Roll each into a 12-inch (30 cm) log, approximately 10 oz. (280 g) each. Wrap in plastic wrap and refrigerate for at least 2 hours or until firm.

5. Preheat & Prep
Preheat your oven to 350°F (180°C )

6. Coat with Sugar
Sprinkle the granulated sugar onto a work surface and roll the chilled dough logs in it until fully coated.

7. Slice & Bake
Using a sharp knife, slice the logs into ½-inch (1 cm) thick rounds. Arrange them on the prepared baking sheets, leaving some space between each.

8. Bake to Perfection
Bake for 12-15 minutes, or until the edges turn lightly golden.

9. Cool & Enjoy
Transfer the cookies to a wire rack and let them cool completely.
