Ingredients:

1 cup Semolina/Suji (Fine Semolina, coarse one won’t work)
Liquid Milk - As needed to make a soft dough. For fine suji, 1.5 cups milk, for other suji please use 2-2.5 cups milk otherwise your mishit will break while frying.
3 tbsp Sugar
1 tbsp ghee/butter
2 tbsp milk powder or khoya

For the Sugar syrup:

1 cup Sugar
1 cup water
3 Cardamom (elachi)

Tips:
• Please use the fine semolina for this recipe. Coarse semolina will not work and will make the jamuns crack while frying
• While preparing the semolina dough if you feel the suji is too dry please add additional milk and ensure soft dough is prepared.
• While shaping the jams ensure there are no cracks, otherwise there will be bigger cracks while frying.
• Also please make sure you heat the oil first then fry at low to medium flame initially, and only in the end you can raise the temperature to medium high to make the jams black.
• If incase while frying you notice that the jams are cracking , add ½ of an egg white to the mix and mix it with light hands. Remember over kneading the dough will make it crack.
• After trying to make these several times, and failing quite a few times I came up with the above solutions. By following these I’m sure your kalo jams will be perfect.
