Maids of honour were conceived by the chefs of Catherine or Aragon, the wife of king Henry VIII. The tartlets consist of a sweet almond-curd filling encased in flaky puff pastry and in this episode we’ll be sharing our modern recipe followed by a session of tasting at the end.

Ingredients for 6

For the filling:
- icing sugar, for dusting
- Jam tablespoon per cup
- Mixed spice pinch of a teaspoon
- finely grated zest of 1.5 unwaxed lemons
- Lemon juice 1 lemon
- Currants 40g
- 50g caster sugar
- 2 large eggs
- flaked or ground almonds 50g
- 200g curd or cottage cheese
- puff pastry 300g
