Methods & Ingredients for 1kg rice flour.
================================

Filter the rice flour 1 kg in a thin sieve.
Mix 2 TBSP flour with 600 ml of water, boil, make a thin paste, and cool it down.
Mix 1.5–2 TBSP sugar and 1/2 tsp yeast with a cup of warm water and keep it for 10–15 minutes.

Combine rice flour, cooked rice paste, and yeast solution together and make a dough (chapati consistency). Keep it overnight, or 6–8 hours.

After fermenting, add the milk of one big coconut, half "tbsp" sugar, and the required salt and make a thin batter (a little bit looser than dosa batter).

You can add one beaten egg to the batter. The appam will not stick to the pan and will have more taste as well.

Keep it in a warm place for 1 hour to ferment further, and make the appam in a nonstick pan.
If you do not have a non-stick pan, use an oil-treated cast iron kadai well in advance before using it. It is better to apply sesame oil( gingelly oil) to the pan before making each Appam.

One Appam gives 100 -120 calories. Out of which carbohydrates comprise 75% calories, proteins account for 8% calories and remaining calories come from fat which is 17% calories.
