✨ Savory Oats: In a small pot, combine 1/2 cup oats with 3/4 cup water (or 1 cup veggie broth/milk) and a pinch of salt. Stir in 1 tbsp cashew cheese for creaminess. Top with tempeh bacon, cooked asparagus, sliced avocado, sprouts, and hot sauce

✨ Vermicelli Noodle Bowl: Cube 1 1/2 serving fava bean tofu and marinate in 2 tbsp coconut aminos/soy sauce. Toss with 1 tbsp cornstarch + 1 tbsp nutritional yeast and air fry at 400°F for 15 minutes.

Once the tofu is done, assemble bowl with vermicelli noodles, lettuce, shredded carrots, julienned cucumbers, crushed peanuts, fresh mint, and cilantro. Drizzle with hoisin sauce and sriracha

✨ Blue Spirulina Latte: Whisked together 1 tsp ashwagandha, 1 tsp maca powder, 1 scoop of blue spirulina, and 1/4 cup warm water. Add mixture to 1 cup warm soy milk and sweeten to taste.

✨ For the Hibachi: Hassle Back BBQ Tofu: Slice the super firm or fava bean tofu partway through (about ¼" apart) for the Hasselback technique. Combine 1/3 cup Japanese BBQ sauce and 2 tbsp coconut aminos or water and pour onto the tofu. Marinate for 30 minutes. Spray with oil and air fry at 400°F for 10-15 minutes

Fried Rice: Sauté 1/3 cup diced yellow onions and 1/4 cup sliced green onions. Add 1 tbsp minced garlic and 2 cups frozen peas/carrots. After 2 minutes, add 2 cups leftover rice, coconut aminos/soy sauce to taste, 1 tbsp vegan butter, black pepper, optional sesame oil.

Zucchini and squash: Stir-fry 1/2 yellow onion with 2 medium zucchinis and 2 medium yellow squash, season with black pepper and coconut aminos/soy sauce.

Yum Yum Sauce: Whisk together 1 1/2 tbsp melted vegan butter, 2 tbsp vegan mayo, 2 tsp ketchup, 1/2 tbsp maple syrup, 1 tsp rice wine vinegar, 1/4 tsp smoked paprika, and 1/8 tsp ground ginger.
