Grilled Teriyaki Salmon with Veggie Skewers

Ingredients:

For the salmon:
600g salmon fillet (skin on)
4tbsp soy sauce
1tbsp brown sugar
1tbsp ginger powder
1 garlic clove(grated)
1tbsp olive oil( + for greasing )
1 lemon
Salt to taste
Pepper to taste

For the veggie skewers:
1 courgette
10 chestnut mushrooms
1 red onion
4 baby peppers
2 yellow zucchini (small)
3 tablespoon olive oil
Salt to taste
Pepper to taste

For garnish:
Spring onion

Method:

Remove scales and bones(if there are any) from salmon.
Place salmon into a tray or bowl and add soy sauce, brown sugar, ginger powder, grated garlic clove, olive oil, salt and pepper. Massage well to properly coat the fish.
Leave to marinate (up to 6 hours) or whilst you prepare the vegetables.
For the veggie skewers, slice the courgette and yellow zucchini( 1cm thick), cut off the stem of the mushroom, deseed baby peppers and cut into 4, peel the onion, cut the bottom and top and slice in half, then cut each half into 4 and separate each part in half, so you will get 16ps in total.
Start to assemble the skewers: courgette, baby pepper, red onion, yellow zucchini, mushroom, then repeat, and then again courgette, baby pepper, red onion. Brush skewers with a light coat of olive oil and season with salt and pepper.
Prepare the cusimax electric grill according to instructions and preheat it to 180C
Place salmon on the grill (skin side up)and arrange veggie skewers next to the salmon.
Do not move the salmon once you put it on a grill, after 3-4 minutes change the position of the fish from horizontal to vertical and cover with the lid. Cook for 3-4 minutes more and flip the fish. Flip the veggie skewer once they start to look brown. Cook covered for another 5 minutes or until ready.
When ready, garnish with chopped spring onion and enjoy with more teriyaki sauce.

Please note:
You can use any veggies you like.
You can brush the fish with more teriyaki sauce at the end.
The time of cooking will vary depending on the weight of the fish and its thickness.
