Pasta: 200g (about 2 cups, any short pasta)
Mild melting cheese: 100g (about ¾ cup), cubed

Steps:
1. Soffritto: Heat olive oil in a pot over medium heat. Add chopped onion, carrot, and celery. Sauté until softened.
2. Season: Add a pinch of salt and black pepper to the soffritto.
3. Potatoes: Add cubed potatoes and stir to coat in the soffritto.
