#KoriGassi #KoriGhassi is an authentic and delicious #ChickenCurry from the lands of Mangalore. It is best savoured with rotti and commonly referred to as Kori rotti. But it can be savoured with rice, idli, neer dosa, pundi, appams and the combinations are endless.
Ingredients for the masala paste:
Coconut Oil/Ghee
12 Byadgi Chillies
10-12 Gundu Chillies (gundu chillies give spiciness . If unavailable double the amount of Byadgi Chillies or add extra Black pepper corns)
2.5 tbsp Coriander Seeds
0.5 tbsp Cumin Seeds
0.5 tbsp Fennel Seeds
0.5 tsp Fenugreek Seeds/Methi
1 tsp Black Pepper
0.5 tbsp Poppy Seeds
0.5 tsp Carom Seeds/Ajwain
3 Cloves
Half Star Anise
Small piece of Cinnamon
5 Cardomoms
Half Big Cardomom
Coconut milk -close to 1 litre (can vary depending on the thickness that you require) extracted from 1 medium sized coconut.
This step can be totall skipped as well, if you want to have it with rice. Typically for having this curry with Rotti (kori Rotti), thinner consistency is required, so coconut milk is added.
Ingredients for the curry
Ghee/ Coconut Oil
Pinch of Fenugreek seeds
1 tsp Cumin seeds
2 crushed garlic clove
1 onion
12-15 currly leaves
Tomato
Salt
Turmeric
Coriander leaves
Ingredients for the Tadka
Ghee/Coconut Oil
Pinch of fenugrekk seeds/methi
1/2 tsp cumin seeds/jeera
